ingredients

1 pound scallops
Brie cheese
white wine
salt and fresh ground pepper
4 tablespoons olive oil
3 cloves garlic, minced
dried thyme

directions

Heat the oven to 450 degrees F. You'll need several small oven-proof serving bowls, or some large ramekins.

Place the scallops in a mixing bowl. Add a quick grinding of pepper and some salt. Add a small pinch of thyme. Mix the whole thing together, then add the olive oil. Mix again.

Put the scallops in the baking dishes. Pour in just enough wine to come half way up the scallops. Place 1/4" think slices of Brie on top of the scallops, so that each one is about half covered.

Bake in the oven for 12-15 minutes.
