ingredients
3 pounds pork loin, boneless
3 cloves garlic, halved lengthwise
Salt and pepper
1 tablespoon caraway seeds
3/4 pound bacon
4 cups green cabbage, shredded
1 1/2 cup sauerkraut
1 can (28 ounce size) petite diced tomatoes
2 bay leaves
12 ounces German beer
directions
Place 6 small slits into pork loin and insert halved garlic into slits. Season pork with salt and pepper, to taste.
Place all ingredients in large pot and cook, covered, over medium-high heat for 1 hour and 45 minutes. Stir often to prevent pork from burning.
When ready to serve, remove bay leaves and shred the pork.
