Roast Tuscan Pork Loin With Garlic And Herbs

ingredients
5 cloves garlic, minced
2 teaspoons dried rosemary
1 teaspoon dried thyme
1 teaspoon kosher salt
1 teaspoon black pepper
4 pounds boneless pork loin
1 tablespoon olive oil
directions
Preheat the oven to 425 degrees F.
In a small bowl, combine the garlic, rosemary, thyme, salt, and pepper. Rub the pork with the garlic mixture then drizzle it with the olive oil. Place the pork on a rack in a baking dish and place in the oven. Roast at 425 degrees F for 30 minutes.
Adjust the heat to 350 degrees F. Baste the roast with any juices that have accumulated in the pan. Continue to roast for 1 more hour.
Remove the pork from the oven and let rest for 10 minutes before slicing and serving.
