Pork loin is slowly roasted with a spiced orange glaze. If you use a different size pork loin, adjust the cooking time as needed (35 minutes per pound)
1 cup orange juice
1/2 cup light brown sugar
1 tablespoon ground ginger
1/4 teaspoon ground cloves
5 pounds pork loin
2 teaspoons salt
freshly ground black pepper
Combine the orange juice, brown sugar, ginger, and cloves in a small saucepan over medium heat. Bring to a simmer and let cook for 30 minutes while preparing the pork.
Preheat oven to 325 degrees F.
Place the pork fat side up in a roasting pan. Rub the salt and pepper evenly over the meat.
Place the roasting pan in the oven and cook for 3 hours or until a meat thermometer reads 170 degrees F. Baste with the orange sauce several times during cooking.
Remove the pork loin from the oven, cover with foil, and let rest before slicing. If desired, thicken the remaining orange sauce with cornstarch and serve as a sauce.

I wish that it had been specified if the roasting pan was to be covered or uncovered while in the oven... I'm going to make this today and will guess that it is to be uncovered... and crossing my fingers... I will let you know how it all worked out!
Roasting is typically done uncovered. If you cover the pan then you are more baking it than roasting it.

I have not tried it with orange juice but I have tried it with pineapple just chunk pineapple and it comes out delicious almost the same ingredient

Absolutely loved the orange juice baste on this pork roast. It wasn't overly sweet even though it called for 1/2 cup of brown sugar. The roast was tender and flavorful. Very good!
