Hearty Bacon Cauliflower Soup

ingredients
4 ounces bacon, cut into thin strips
1 1/2 teaspoon all-purpose flour
1 onion, chopped
2 tablespoons minced garlic
1 head cauliflower, cut into bite-size pieces
2 bay leaves
1 tablespoon thyme
3 cups chicken broth
3 cups milk
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Cheddar cheese
directions
In a Dutch oven, cook bacon for 5 minutes or until cooked but soft. Stir in onion and garlic and cook for 5 minutes or until soft. Add flour and mix well.
Add cauliflower, bay leaves, thyme, broth, and milk; bring to a boil. Simmer 10 to 15 minutes or until cauliflower is tender. Remove bay leaves.
With a slotted spoon, transfer solids to a blender and puree.
Return to Dutch oven. Add more milk, if necessary. Stir in salt and pepper, and then heat through.
Ladle into bowls. Sprinkle with cheese.
