This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.

This cauliflower and cheese soup is so much more than that. Carrots, onion, and celery pureed along with cauliflower create a rich veggie base.

1 medium cauliflower head, separated flowerets
1 medium onion, chopped
1 carrot, chopped
1 celery stalk, chopped
4 cups chicken stock
2 cups light cream
1/2 teaspoon Worcestershire sauce
1 cup grated Cheddar cheese
salt, to taste
freshly-ground black pepper, to taste
chopped chives, for garnish
Put cauliflower, onion, carrot, celery, and chicken stock in crock pot. Cover and cook on LOW for 6 to 8 hours.
Puree in blender. Return to crock pot. Blend in cream, Worcestershire, and cheese. Add salt and pepper to taste. Stir to mix well. Turn control to HIGH and heat through; garnish servings with chopped chives.

Making this tonight, so grateful the discussion came about the worchester sauce since i was going to leave it out, but using canned soup is too lazy! Cooking is all about fresh and if you really spend 6 hours cooking down a head of cauliflower (not sure why so long?) why open a processed product? will post photos tomorrow!
Surely the half teaspoon worstershire sauce should be half cup? what would half teapoon do?
Have you tasted Worcestershire sauce? 1/2 tsp may not alter the taste of the recipe dramatically, but I can guarantee you don't want to add 1/2 cup :)

I made the dish a little more healthy (in line with South Beach guidelines) by substituting one can of Campbells Cheddar Cheese Soup, 1 can of 2% milk and omitted the cream and the shredded cheese. I used a hand blended and creamed the cauliflower veggie mix before adding the cheese soup and milk. I also opted to use lower sodium chicken broth. The pureed cauliflower gives the soup thickness without having to add cream.
