Loaded Baked Potato Soup Recipe

ingredients

6 large baking potatoes, peeled, cut in 1/2-inch cubes
1 large onion, chopped
1 quart chicken broth
3 cloves garlic, minced (or pressed)
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon pepper
1 cup cream or half-and-half cream
1 cup shredded sharp Cheddar cheese
3 tablespoons chopped fresh chives
1 cup sour cream (optional)
8 slices bacon, fried & crumbled
cheese, for sprinkling


directions

Combine first seven ingredients in a large crockpot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).

Mash mixture until potatoes are coarsely chopped and soupy is slightly thickened. Stir in cream, cheese and chives.

Top with sour cream (if used), sprinkle with bacon and more cheese.

This is so fantastically simple to make. I did adjust the seasonings to my personal preference and sauteed the onion before adding. I also added dried chives to the broth and the sour cream to the soup about an hour before serving. Oh yes, it also got a dollop of it on top in my bowl. But I love me some sour cream. This was de-freaking-licious! I wrote this review and gave it 5 stars because it was a great soup base recipe. But then again, I never follow recipes exactly. I have really picky eaters in my house.

We are in the throes of a kitchen remodel, meaning I have no stove or oven. So I am trying desperately to find good crock pot recipes because my husband and I are dying for a home cooked meal! I had a bunch of potatos and onion to use up so I decided to make potato soup. The day is cold and rainy, so perfect soup weather. I followed the recipe exactly and it came out perfect! Great taste and easy to make. My husband loved it, too. Makes a lot of soup so we will have leftovers for awhile! Which is great because that means all I have to do is heat this up in the microwave and dinner or lunch, is served!

I never made loaded potato soup before because I can not tolerate creamy soups. But it is my neighbor's favorite. She loved it and so did my husband. My husband is a very fussy eater. It was a great recipe without making any changes. I will probably make it again before the winter ends.

I made this for a potluck at work and it was a hit. The only changes I made were I used Lipton Onion Soup mix in place of the onion and cut the salt to half what it had suggested. I also mixed in the sour cream with about an hour to go. (all suggestions from other reviewers) The only thing I might change next time is omitting the extra salt completely. With the extra salt from the soup mix, it was just a little too salty for my preference but overall it was fabulous.

Made this soup with A LOT less salt. The 2 1/2 tsp. called for scared me a bit, so I backed off a bit. It was perfect. My kids love it almost as much as my stovetop baked potato soup. Did anyone make the soup exactly as the recipe states? Was the 2 1/2 tsp salt too much or just right?

This recipe was fantastic prepared just the way it way presented. For the life of me, I do not understand why people alter a recipe then rate it. It is not a true rating of the recipe if you go changing everything with an "I did this..." Again, delicious just the way it was written.

This took FOREVER...maybe too many potatoes. When it all came together, it was SO worth the effort. I ate two bowls, before the potatoes were cooked. The "I'm not hungry," person in the house, LOVED it. Will definitely make it, earlier, again. FIVE STARS.

I made this soup for a pot luck and it was a hit! Several people asked for the recipe. I did make a few modifications that I learned from other reviewers. I added the sour cream during the cooking and substituted Lipton onion soup in the place of the onion because I didn't want to cut up onions in the morning :-) I highly recommend this soup for anyone who loves baked potato soup!

I tried the soup and it was good. I read all the reviews first and adjusted the salt and garlic. I sub the potatoes for hash browns and it was good...I used a half bag and should have used the whole bag. I used green onion instead of chives....next time I will use the chives and a whole bag of hash browns. I will make it again.

Made this soup to celebrate the first snow of the season and it was delicious!! I let the onions sweat over low heat before throwing them in and added celery as well. I substituted the sour cream and the cream/half & half for 0% Greek Yogurt to save some calories and it was delicious!! It gave the soup a nice tangy flavor and made it very creamy! I also added the bacon, yogurt (or sour cream and 1/2 & 1/2), and cheddar about an hour before serving. Grated in some fresh nutmeg at the end and it was perfect! Thanks for the recipe, this potato soup recipe is our favorite so far!

We subbed the potatoes for frozen hashbrowns, eliminated onions because of preferences and used the sour cream. I love that it was ready quickly and we even had guests over to enjoy.

This recipe is very good! I made a few changes based on other user comments, such as adding the sour cream right to the soup, and I also added the bacon pieces right into the soup instead of as a garnish. The only thing I did not like was the texture of the soup, as I found it to be TOO soupy, so I simply added two more potatoes that I quickly boiled before, and I was happy!
