6 large baking potatoes
1 large onion
1 quart chicken broth
3 cloves garlic
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon black pepper
1 cup cream or half-and-half cream
1 cup shredded sharp Cheddar cheese
3 tablespoons chopped fresh chives
1 cup sour cream (optional)
8 slices bacon, fried & crumbled
Cheddar cheese, for sprinkling

directions

Peel the potatoes and cut into half-inch cubes. Chop the onion into a medium dice. (Note: sizes of onions vary greatly so adjust the recipe accordingly to your preferences). Crush or press the garlic.

Add the potatoes, onion, broth, garlic, butter, salt and pepper to the crock pot. Stir gently. Cover, cook on low for 4 hours or until potatoes are tender.

When potatoes are tender, mash the mixture with a potato masher or a large wooden spoon until chunky but not completely mashed.

Stir in the cream, Cheddar cheese, and chopped chives, and turn the heat to high. Cook for 15 minutes longer or until heated through.

To serve, ladle soup into individual bowls and top with a dollop of sour cream, crumbled bacon, and additional shredded cheese, if desired.

    A favorite go to of mine. I‘ve made it in the crockpot and when pinched for time in the pressure cooker. It is such a flexible recipe and I love playing with the ingredients. For instance, shredded triple cheddar cheese instead of just plain cheddar and the store bought bacon crumbles in place of fresh bacon. This is my go to potluck entree as well and always gets rave reviews.

    • Omit the salt? It wasn't too salty for us when we made it. The heavy cream and sour cream should balance it out.

    • You should be able to freeze it without the toppings. The texture might change a bit upon reheating.

    I was a little sceptical with this recipe as most of what I make in a crock pot turns out to be lacking flavor. I was astonishingly surprised! This is soooo good!     My fiance and I absolutely LOVED this soup! It is perfect for a cold winter day and was very filling. I just made a couple modifications to it. I used 6 large red potatoes (Yes they take forever to cut up 6 of them, but totally worth it!!), corn and finely chopped carrots, and just kind of estimated by adding a little more until it looked like enough in the soup. I also added sour cream (probably about 1/4 to 2/3 a cup, just estimated here too) when I added the half & half, and a half cup of extra sharp cheddar cheese. Then I let it cook on high for about another hour to make sure it was a nice and somewhat thick consistency. I also used less onion based on the reviews people had written, and I think the flavor turned out great! My fiance kept commenting about how he was so excited to have leftovers for tomorrow, this is definitely going down in the "favorites" recipe book!!

    Very good soup. I used my fat-free half and half. I didn't have onion or fresh chives or garlic cloves. I substituted using 1 1/2 TBL onion powder, 3 tsp dried chives, and 1 1/2 tsp of minced garlic. I found the substitution amounts on the internet. I also used bacon bits. All good. A little quicker since I had less chopping. I will only use a little less pepper since we aren't big on pepper. Will definitely make again.

    I made this for a potluck at work and it was a hit. The only changes I made were I used Lipton Onion Soup mix in place of the onion and cut the salt to half what it had suggested. I also mixed in the sour cream with about an hour to go. (all suggestions from other reviewers) The only thing I might change next time is omitting the extra salt completely. With the extra salt from the soup mix, it was just a little too salty for my preference but overall it was fabulous.

    I wish I could give it 4.5. The only change I made from the recipe was to use a bag of hashed browns (I used the Ore Ida 32 oz bag) instead of peeling and chopping potatoes. Texture turned out almost perfect. I wish I would have had maybe one more potato in it, but it was fine. My main gripe: I love onion, but a WHOLE chopped onion was just way too much. I wish I would have halved it. It was more like an onion and baked potato soup. But it was still tasty, and what a great starting recipe. I added the half-and-half and the sour cream at hour 4 (on high) and let it cook another 30 minutes. Turned out delicious (if a bit onion-y) and I would definitely make it again (with half as much onion).

    Am making this delicious potato soup for a crowd. Made it last week and my grand kids and husband loved. Does anyone know how long it will keep in the refrigerator. I kept it for 5 days and it was still very good. I would like to make it today to be eaten next week.

I sub the potatoes for hash browns and it was good...I used a half bag and should have used the whole bag.     This receipe was NOT good! I was shocked when I read it wanted a large onion but I just followed as instructed and yuck! tasted like french onion soup and was just not good at all. It might have potential with 1/4 cup of onions but I should have followed my instincts so shame on me. Good luck.

    Made this soup to celebrate the first snow of the season and it was delicious!! I let the onions sweat over low heat before throwing them in and added celery as well. I substituted the sour cream and the cream/half & half for 0% Greek Yogurt to save some calories and it was delicious!! It gave the soup a nice tangy flavor and made it very creamy! I also added the bacon, yogurt (or sour cream and 1/2 & 1/2), and cheddar about an hour before serving. Grated in some fresh nutmeg at the end and it was perfect!     We subbed the potatoes for frozen hashbrowns, eliminated onions because of preferences and used the sour cream. I love that it was ready quickly and we even had guests over to enjoy.

    This recipe is very good! I made a few changes based on other user comments, such as adding the sour cream right to the soup, and I also added the bacon pieces right into the soup instead of as a garnish. The only thing I did not like was the texture of the soup, as I found it to be TOO soupy, so I simply added two more potatoes that I quickly boiled before, and I was happy!

    Easy and very delicious! I saved this one in my recipe book! I used all green onions instead of yellow or white and cut the number of potatoes in half (still plenty). I also added the half and half, cheese and sour cream about an hour before we ate it. Love it! Even my picky 13 year-old loved it!

    Wow! Great recipe and very easy to make! My kind of recipe. Very tasty, and like the restaurant varieties. Could be a bit thicker. I sauteed the onions first as one reviewer suggested and added the sour cream to the whole pot of soup. Might use a little less salt next time, but overall...its a KEEPER!

    My toddlers love potato soup at restaurants, and I was hoping this would be one of their favorites! However, the soup has too much garlic, onion and salt! It left a bad aftertaste, and they definitely hated it! My husband didn't mind it that much, but thought it had too much salt. A teaspoon is way too much!

    Very tasty and adaptable. I think next time I'll add some broccoli. I do have one suggestion: saute the onions prior to cooking with the potatoes. We had one batch go down the drain after following the recipe. The raw onions created a very funky flavor in that first batch. I'm an onion lover but something didn't work the first time.

    This soup was awesome! It tastes just like my favorite loaded baked potato soup that I order at a local restaurant. I used green onions instead of chives and it was delicious! I made it to serve 4 people and it was enough for an average size bowl for 3 people so keep that in mind if you are making it for larger families.

    I made this, but like one of the other reviews I added sour cream to the whole mix and left the potaoes solid and did not mash. It was FANTASTIC!!!! We put the lrft overs away and the next night I fixed meatloaf, the family begged for the soup on the side instead of mashed potatoes! Even better the second night!!!

    AWESOME! I used turkey bacon and added it to the potatoes before cooking them. I also added dried chives and some basil to the potato mix. I opted not to use the sour cream. It was delicious! my roommates loved it. Thanks for the recipe!

    I made this last sunday for my family, they loved it. I didn't have any bacon fried up so I used bacon bits instead, just as good! I didn't measure exactly but sure came out good, took the rest to work and the guys gobbled it up. True comfort food - easy and wonderful!

    The only thing I did different was to add the cup of sour cream to the whole of the soup, not just on each bowl. That thickened it enough that next time I won't lightly mash the potatoes. It is delicious and simple either way.
