ingredients

6 large baking potatoes, peeled, cut in 1/2-inch cubes
1 large onion, chopped
1 quart chicken broth
3 cloves garlic, minced (or pressed)
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon black pepper
1 cup cream or half-and-half cream

1 cup shredded sharp Cheddar cheese
3 tablespoons chopped fresh chives
1 cup sour cream (optional)
8 slices bacon, fried & crumbled
cheese, for sprinkling

directions

Combine first seven ingredients in a large crockpot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).

Mash mixture until potatoes are coarsely chopped and soupy is slightly thickened. Stir in cream, cheese and chives.

Top with sour cream (if used), sprinkle with bacon and more cheese.

Well, all the other reviews about how awesome this soup recipe is aren't wrong! It's incredible, actually. Quite possibly the best potato soup I've ever had (and I've tried a lot!) The crock pot gets the potatoes very tender and it has great flavor. Rich and filling. I loved everything about it!

This was a really good recipe. I did cut down on the potatoes from 6 to 4. I also cut down on the onion to half and the garlic cloves to two. I also added a little bit of the bacon grease and some Frank's Hot Sauce and it gave it a nice little kick.

This soup is incredible! I did use a small onion, not large (large is kinda relative so an actual measurement would be helpful). I did use three cloves of garlic but again that is one of those measurements that's not helpful. I used three small cloves and it was delicious. It's a rich soup so as much as I'd love to eat this every day, I'll have to save it as a treat. Although we're about to be snowed in so I'll probably make it as comfort food again!! Amazing recipe!! OMG! We ate every drop. I only used a small onion (would be nice if it gave measurement in cups instead of just size) and it worked out great. Everyone in my family loved this recipe and that's rare. Best potato soup I think I've ever had! Thank you for sharing this recipe, it's going in my permanent rotation this winter!
