Loaded Baked Potato Soup

6 large baking potatoes, peeled, cut in 1/2-inch cubes
1 large onion, chopped
1 quart chicken broth
3 cloves garlic, minced (or pressed)
1/4 cup butter
2 1/2 teaspoons salt
1 teaspoon black pepper
1 cup cream or half-and-half cream
1 cup shredded sharp Cheddar cheese
3 tablespoons chopped fresh chives
1 cup sour cream (optional)
8 slices bacon, fried & crumbled
cheese, for sprinkling
Combine first seven ingredients in a large crockpot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).
Mash mixture until potatoes are coarsely chopped and soupy is slightly thickened. Stir in cream, cheese and chives.
Top with sour cream (if used), sprinkle with bacon and more cheese.

Well, all the other reviews about how awesome this soup recipe is aren't wrong! It's incredible, actually. Quite possibly the best potato soup I've ever had (and I've tried a lot!) The crock pot gets the potatoes very tender and it has great flavor. Rich and filling. I loved everything about it!

Sounds good, but WAY, WAY, WAY to much salt!!
That's a full day's worth in one serving.
Will try it with 1/3 the salt.

This is my first time making any potato soup. It is super easy and super delicious. I am making it for my parents tomorrow. This soup is seriously flawless :-)

This soup was delicious! I made it exactly as written except used 1/2 cheddar and 1/2 cheddar Jack cheese because that's all I had. The consistency was perfect. A great recipe to have waiting ready to eat on a cold raw day.

Chose this for my first time making loaded baked potato soup. Turned out DELICIOUS and I will definitely be adding this recipe to my stash. I about one and a half batches (had a bunch of small potatoes that needed to be used up). I chopped the bacon and cooked it with the potatoes the whole time, and I left the skin on the potatoes. Only thing I HAD to change was that I added some flour to thicken it up. Yum yum, FIVE STARS!

This is the most used recipe in my crock pot! The kids request it almost weekly now. We love it! I've tried a few variations on this recipe (adding in veggies, other seasonings, etc) but this is my favorite version.

This soup is serious comfort food. I was having a bad week so I put this in the crock this morning knowing I wouldn't feel like cooking tonight and came home to the most wonderful soup. Instantly put me in a good mood again. Delicious!
