You can have your beautiful bloomin' onion without breaking out a deep fryer. This baked version cuts the calories down a bit making it a less guilty indulgence.
1 large onion
1/2 cup Panko bread crumbs
1/2 teaspoon garlic powder
1/4 teaspoon paprika
2 egg whites, well beaten
Spicy Dipping Sauce
3 tablespoons cottage cheese
1 tablespoon mayonnaise
1/8 teaspoon prepared horseradish
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
Preheat the oven to 375 degrees F.
Place the onion root-side down on a cutting board. Slice into the onion many times, cutting only 3/4th of the way down (so you aren't cutting all the way through and the onion stays together). Place the onion in a shallow baking dish. Trim the bottom of the onion if needed so it stands upright.
Combine the bread crumbs, garlic powder, paprika, and beaten egg white. Coat the onion with the mixture. Drizzle with olive oil.
Place the baking dish in the oven and bake at 375 degrees F for 40-50 minutes, or until the onion is soft and the crumb coating is golden brown.
Meanwhile, combine the cottage cheese, mayonnaise, horseradish, cayenne, salt, and pepper in a blender or food processor. Puree until smooth. Transfer to a serving bowl. Cover the bowl and refrigerate until serving time.
Serve the blooming onion with the dipping sauce.
