Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

Wait, pasta and Mexican food? Yep. This meeting of the ethnic titans is far more Mexican than it is Italian, with zesty green chiles, Mexi-corn, and other taco-style flavors.

12 ounces spaghetti pasta
1 pound lean ground beef or turkey
1 package (1.25 ounce size) taco seasoning mix
3/4 cup water
1 can (14.5 ounce size) diced tomatoes, undrained
2 cans (11 ounce size) corn with peppers (southwestern or mexican style), undrained
1 can (7 ounce size) chopped green chiles, undrained
1/2 cup thinly sliced green onions
1/2 cup shredded mexican cheese blend
Bring a large pan of salted water to a boil over medium-high heat. Break the pasta in half and add to the water. Cook until al dente. Drain well and keep the pasta warm.
Meanwhile, heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until the beef is no longer pink. Drain off any excess grease. Add the taco seasoning and water. Bring to a simmer and let cook for 5 minutes.
Stir in the tomatoes, corn, green chiles, and green onions. Bring to a simmer and let cook for 10 minutes.
Combine the beef mixture with the pasta and mix well. Divide the spaghetti between individual serving dishes and top with the shredded cheese. Serve immediately.

I used Rotel for part of the tomatoes. Think next time I'll use 2 packages of taco seasoning and only Rotel tomatoes. It needs more spice! It didn't have much Mexican flavors.

I thought this was good. I've made it twice now - I used ground beef, the "hot" taco seasoning mix, diced tomatoes with green chiles, and mexicorn. One time I used spaghetti pasta and the other I used rotini. Both ways are delicious.

I lightened this up by using whole wheat pasta, lean ground turkey breast, omitting the corn (has more carbs), and using fat-free cheese.
