ingredients
2 ounces salt pork
1/2 pound ground beef
2 medium onions, diced
1 cup chopped celery
1 clove minced garlic
4 cups water
6 ounces tomato paste
1/2 cup chopped fresh parsley
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon dried oregano
1 pound washed fresh spinach
2 large zucchini, diced
1 can (8 ounce size) baby lima beans
1/2 cup elbow macaroni
grated Parmesan cheese
directions
Remove pork rind; cover pork with boiling water and soak for 20 minutes. Drain well and dice. (Hint: chill pork first for easier dicing)
Use bacon drippings to brown salt pork and ground beef. Add onions, celery, garlic to pork and beef. Cook over medium heat for 5 - 10 minutes or until vegetables are tender.
In a large pan, combine water, tomato paste, parsley, thyme, salt, oregano with all the meat. Reduce heat, cover and simmer for 15 minutes. Add spinach, zucchini and lima beans. Cover and simmer for 15 more minutes.
Stir in cooked macaroni. Serve hot, garnished with Parmesan.
