The crock pot makes fondue so simple because it maintains a nice low, even temperature. This recipe uses ricotta cheese which gives it a richer and more dense consistency, perfect for heartier dippers like Italian bread slices.
1 envelope herb soup mix
1 container (16 ounce size) sour cream
1 container (8 ounce size) ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup chopped pepperoni (optional)
1 loaf Italian bread, cut into 1/2-inch slices
In 1-1/2-quart slow cooker, combine soup mix, sour cream, ricotta cheese, 3/4 cup mozzarella and pepperoni. Sprinkle with remaining 1/4 cup mozzarella.
Cook on HIGH 2 hours or until heated through.
Serve with bread slices for dipping.
If using 4-quart slow cooker, you may double the recipe and cook on HIGH 3 hours or until heated through.

Add a dash of garlic powder or a minced garlic clove for a garlic pizza flavor.
If you don't have a slow cooker, you can make this fondue in a saucepan over low heat, stirring frequently.
Serve with a variety of dippers like vegetables, cooked meatballs, or pretzel bites.
For a spicier version, add crushed red pepper flakes or diced jalapenos to the fondue.
Keep the slow cooker on a warm setting during serving to keep the fondue at the right dipping consistency.
Try different types of mozzarella like smoked mozzarella. Even different brands can change the flavor.
This fondue pairs well with a light red wine or a crisp beer.
If you have leftover fondue, it can be refrigerated and reheated gently, adding a bit of milk if necessary.
Yes, you can use cream cheese for a smoother texture, but ricotta provides a richer flavor.
You use another dry soup mix, or ranch dressing mix, or you can make a homemade mix using dried herbs like parsley, dill, chives, and onion powder.
Feel free to add ingredients like sauteed mushrooms, diced onions, or cooked sausage.
If the fondue is too thick, you can thin it with a little milk or cream.

We ended up with unexpected company last night and I wanted to do something a little different. After a quick run to the store, this came together very quickly. It was really good! My whole ( exceptionally picky)family can't wait until we have it again. We used Knorr veggie soup mix as the "herb soup." We also used mini tortellini to dip in addition to french bread toasted cubes. Next time I think I will use turkey pepperoni and increase the amount. We are adding this one to our favorites!

Believe it or not, this crazy dip was an incredible success at a very big Christmas party. I made enough for 12 and the hostess loved it so much that she ate it for the next 2 days. I used a mini Cuisinart to dice the pepperoni and everyone quickly became addicted to what I was calling "White Pizza Fondue Dip!" Be brave and serve it but don't forget to call it fondue!
