Watermelon, Cucumber & Mint Salad

ingredients
4 cups seedless watermelon cut into 1 inch pieces
2 cups seedless cucumber peeled and cut into 1/2 inch cubes
Vinaigrette
2 tablespoons lime juice
2 tablespoons extra virgin olive oil
kosher salt
1/4 cup fresh mint, chopped
1 small bunch watercress
1/4 cup pine nuts, optional
directions
Put the watermelon and cucumber in a large glass bowl.
To make the dressing, whisk together the lime juice, olive oil and pinch of salt. Pour over watermelon mixture and toss to coat.
Add the mint, watercress and pine nuts (if using) and toss again.
Chill the salad 1 hour before serving.
