Savoury Pecan Loaf

8 ounces pecan halves or pieces, finely chopped
3 cups fresh wholegrain bread crumbs
2 tablespoons butter
1 cup finely chopped onions
1 cup finely chopped celery
1 cup finely grated carrot
1 cup cottage cheese (optional)
1 teaspoon dried oregano
3 eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chopped fresh parsley
directions
Preheat the oven to 350 degrees F. Grease a loaf pan.
Combine the pecans and bread crumbs in a bowl. Set aside.
Melt the butter in a skillet over medium heat. Add the onions, celery, and carrot and cook, stirring frequently, until very soft.
Combine the pecan mixture, vegetables, cottage cheese, oregano, eggs, salt, pepper,and parsley in a bowl. Mix well then transfer to the loaf pan.
Place the pan in the oven and bake at 350 degrees F for 35-40 minutes or until the loaf is set.
Remove the pan from the oven and let cool in the pan. Store in an airtight container.
