Did you know that you can make bread from just 2 ingredients? Just mix your favorite flavor of ice cream with self-rising flour for an easy, and tasty, quick bread.
1 pint ice cream, melted
1 1/2 cup self-rising flour
Preheat the oven to 350 degrees F. Grease and flour a 8x4 loaf pan.
Combine the melted ice cream and flour in a bowl and mix just until the flour is moistened. Transfer the batter to the prepared loaf pan.
Bake the bread at 350 degrees F for 40-45 minutes or until a wooden pick inserted in the middle comes out clean.
Remove the pan from the oven and let cool on a rack for 5 minutes then remove the bread from the pan and let cool completely on the wire rack. Store in an airtight container.
You can use any variety of ice cream flavors in this recipe. We like vanilla, coffee, banana nut, and pumpkin pie ice cream flavors.
Avoid overmixing the batter.
Grease and flour the loaf pan well for easy release of the bread after baking.
Add a sprinkle of sugar or nuts on top of the bread before baking for extra texture.
For a richer flavor, use premium ice cream with a high fat content.
Self-rising flour is a combination of all-purpose flour, baking powder, and salt, which helps baked goods rise without the need for additional leavening agents.
You can substitute all-purpose flour for self-rising flour in this recipe, but you will need to add baking powder and salt. You can use this recipe to make your own.
Any flavor of ice cream can be used in this recipe. Low-fat ice cream can be used but fat-free won't give quite as good results.
Mix the melted ice cream and flour until just combined to avoid overmixing, which can result in a dense or tough texture.
You can incorporate mix-ins like nuts, chocolate chips, dried fruit, or spices as desired.
Store the bread in an airtight container at room temperature for up to 2-3 days or in the refrigerator for longer shelf life.
You can freeze the bread for up to 2-3 months. Wrap it tightly in plastic wrap and then in foil before freezing.
The bread can be eaten on its own, toasted with butter, or used as a base for sandwiches or French toast.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

intriguing recipe. Now what do you do with it? is it a coffee cake bread? can you make a regular sandwich using this bread? or? thank you
It's considered a quick bread and depending on what flavor ice cream you use, will probably be on the sweeter side. It has a cakier texture than yeast bread so not your standard sandwich bread but (again, depending on the ice cream used) would be good with peanut butter, jelly, etc.
