Grape Nut Bread

ingredients
1 cup Grape Nuts cereal
2 cups buttermilk
2 cups sugar
2 eggs
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
directions
Combine buttermilk and grape nuts. Allow to soak for 10 minutes.
Beat sugar and eggs together in a large bowl. Add grape nuts mixture.
Sift flour, salt, baking soda, and baking powder together, and stir thoroughly into the Grape Nuts mixture.
Pour into 2 greased and floured loaf pans and bake at 350 degrees F for 45 minutes, or until toothpick comes out clean.

My husband bought grape nuts cereal by mistake so I was looking for a way to use it up (only one of us eats it as cereal). The bread turned out great and we all enjoyed it even those who don't much care for the cereal.

I bought way too much Grape Nuts cereal and was desperate for a recipe I could use that help use them all up. This is a great recipe. Very moist, very easy, very delicious bread!

I tried this for the first time today. I am a merchant marine chef and the vessel I boarded had a lot of Grape Nuts so...I found a good outlet. My first batch I made the two loaves and in half the batter I added the juice of one lemon and the zest of two... I, and all those who participated, preferred the lemony batch but both were good. The consistency is great, moist, and slices nicely. The 40 minute time was on the money. This recipe is good just as it is or I feel that you can easily add your own touches much the same as I did with the lemony batch. Thanks for an intersting recipe!

Hooray! I had this recipe years ago and loved it! It had disappeared somewhere along the way, so I am very happy to find it again! Very easy, and it tastes wonderful!

This was a great recipe! Very moist, nutty taste. I did change a bit. I added dried cranberries and substituted half the flour with whole wheat flour, flax seed, and wheat germ. It was easy and a great way to use up leftover buttermilk.I've definitely added it to my recipe box. I did have to bake it almost an hour vs. the suggested 45 minutes.
