1/2 teaspoon soda
2 cups flour
1 cup sugar
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons shortening
1 egg, beaten
1/4 cup orange juice
1 tablespoon orange or lemon rind, grated
boiling water
1 cup fresh or thawed frozen blueberries
1/2 cup pecans or walnuts, chopped
directions
Preheat oven to 350 degrees F. Grease 9x5-inch loaf pan.
Mix together flour, sugar, baking powder, soda and salt. Blend in shortening. Stir in egg. Add enough boiling water to orange juice and rind to make 1 cup.
Stir into flour mixture. Add blueberries and nuts, stir gently.
Pour batter into prepared pan. Bake 60 minutes.
