2 1/3 cups all-purpose flour 1 teaspoon baking soda 2 teaspoons baking powder 2 teaspoons ground cinnamon 1/2 teaspoon salt 1 cup vegetable oil 1/2 cup granulated sugar 3/4 cup firmly packed brown sugar 3 eggs 1/2 cup chopped walnuts 1/2 cup canned crushed pineapple in juice, well drained 1/2 cup raisins 1 cup finely shredded carrots

Preheat the oven to 350 degrees F. Grease and flour a 9x9-inch baking dish or loaf pan.
Sift together the flour, baking soda, baking powder, cinnamon, and salt. Set aside in a mixing bowl.
In another bowl, whisk together the oil, granulated sugar, brown sugar, and eggs. Stir the oil mixture into the flour mixture and mix well. Stir in the walnuts, crushed pineapple, raisins, and carrots.
Transfer the batter to the greased dish. Place the dish in the oven and bake at 350 degrees F for 40 minutes or until a toothpick inserted in the center of the bread comes out clean.
Remove the pan from the oven and let cool before slicing and serving. Store the bread in an airtight container.
