2 tablespoons unsalted butter
1 teaspoon baking soda
1 cup boiling water
1 cup chopped pitted dates
2/3 cup walnut pieces
1 cup granulated sugar
1 egg yolk
1 3/4 cup unbleached all-purpose flour
2 teaspoons vanilla extract
strawberry cream cheese, optional

directions

Preheat oven to 325 degrees F. Generously oil a 9 x 5-inch loaf pan and dust with flour.

Place butter, baking soda, boiling water and dates into a heatproof mixing bowl. Let cool. Mix in walnuts, sugar, egg yolk, flour and vanilla extract. Pour batter into prepared pan. Bake for 1 hour.

Cool for 10 minutes and remove from pan onto rack to cool. Slice and serve with strawberry cream cheese and freshly brewed tea.

    A Great Bread! My familoy loves this bread -- especially with the cream cheese spread (their favor blueberry) on top. It is moist, rich, and really, really easy to make. Plus no special ingredients -- I usually have these pantry items on hand to make this if a last minute dessert item is needed. It scales just fine to make multiple loaves and it is great out of the freezer. Can you tell how much I love this bread! Five yummies from me.

    I love making and eating this bread. It immediately becomes a favorite of everyone who eats it. I've been asked to make it for several functions. The difficulty rating needs to be changed so more people try it. It is not a level 3. It's a 2 at most for a beginner. It's so delicious don't anyone to be afraid to attempt making it!! Thanks.
