ingredients
4 pounds hen or fryer, cut up
1 1/2 teaspoon dried basil
1 1/2 teaspoon dried marjoram
1 1/2 teaspoon dried basil
1 tablespoon Creole seasoning
1 pound beef smoked sausage
1 stalk celery, cut up
1 bell pepper, chopped
2 onions, chopped
3 cloves garlic
1 tablespoon dried parsley
1 can tomato sauce
1 package okra
1 tablespoon gumbo file powder
1/2 cup roux & gravy mix
1 cup cold water
sliced green onions
directions
Put hen in a stock pot with enough water to cover. Add herbs and creole seasoning. Bring to a boil and cook until chicken is almost done. Remove chicken and debone, then return chicken meat to broth.
Add remaining ingredients except gravy mix, cold water, and green onions. Dissolve gravy mix in cold water. Add this to pot to thicken.
Bring mixture to a boil, reduce heat and simmer for 1 1/2 hours. Add green onions just before serving. Serve over rice.
