Here's a no-nonsense approach to making a delicious smoked sausage gumbo with traditional ingredients. Gather your broth, spices, and veggies, and let the slow cooker work its magic while you carry on with your day.
1 cup chicken broth
1 can (14.25 ounce size) diced tomatoes, undrained
1/4 cup all-purpose flour
2 tablespoons olive oil
3/4 pound Polish sausage, cut into 1/2-inch pieces
1 medium onion, diced
1 green bell pepper, diced
2 ribs celery, chopped
1 carrot, peeled and chopped
2 teaspoons dried oregano
2 teaspoons dried thyme
1/8 teaspoon ground red pepper
1 cup uncooked long-grain white rice
Combine broth and tomatoes in slow cooker. Sprinkle flour evenly over bottom of small skillet. Cook over high heat without stirring 3 to 4 minutes or until flour begins to brown. Reduce heat to medium; stir flour about 4 minutes. Stir in oil until smooth. Carefully whisk flour mixture into slow cooker.
Add sausage, onion, bell pepper, celery, carrot, oregano, thyme and ground red pepper to slow cooker. Stir well. Cover and cook on LOW 4 1/2 to 5 hours or until juices are thickened.
About 30 minutes before gumbo is ready to serve, prepare rice. Cook rice in 2 cups boiling water in medium saucepan. Serve gumbo over rice.

I make this almost every week it is so delicious. I do not add carrots and instead of pouring this over rice, I make the rice 10 minutes before this is done then I add the rice into crockpot and stir it in good. Very delicious!

We love this gumbo. So easy to make and the flavors gets really blended wonderfully in the slow cooker. I cook it on low for about 6-7 hours and it isn't overcooked.

MMMM! If you want more authentic gumbo flavor, instead adding browned flour stir in gumbo file just before serving. It will thicken the liquid and add flavor.
