4 cups cubed angel food cake
1 pint sliced strawberries
1/4 cup sugar substitute
1 envelope unflavored gelatin powder
1/2 cup fat free milk
1 container (8 ounce size) lowfat vanilla yogurt
1 cup thawed Cool Whip Free Whipped Topping

directions

Place cake cubes in 2-quart glass bowl or individual dessert dishes. Toss strawberries with sugar substitute; set aside.

Sprinkle gelatin over milk in saucepan; let stand 1 minute. Cook on low heat 3 minutes or until gelatin is completely dissolved, stirring constantly. Remove from heat; pour into medium bowl. Cool slightly.

Add yogurt and whipped topping to gelatin mixture; stir with wire whisk until well blended. Reserve 1/4 cup of the strawberries for garnish.

Spoon remaining strawberries over cake cubes; top with whipped topping mixture. Refrigerate at least 30 minutes before serving. Garnish with reserved strawberries.

    Not just for diabetics, this is also great for anyone dieting! Angel food cake is always a good diet food because it is fat free. Using sugar free and fat free ingredients for everything else helps too. I've done this with other berries but strawberries are one of the better diet-friendly fruits. I've also varied the flavor of the yogurt like last time I made this I used lemon. And best of all, it doesn't taste like you are dieting because it's still got a lot of sweet flavor and creamy texture.

    My mother-in-law found this recipe for me to fix for my grandfather to have with Christmas dinner. He is a diabetic and like everyone else he has a sweet tooth. It was a HIT! The entire family loved it and well papa enjoyed something sweet without being lectured. I'm currently planning on fixing another one for Easter dinner. This definitely goes on the 'short list' for holiday cooking.
