ingredients

1 1/2 cup coarsely chopped cooked shrimp
1/3 cup chopped celery
3 tablespoons reduced-calorie mayonnaise
1 teaspoon chopped green onions
1 teaspoon capers
1/2 teaspoon tarragon vinegar
1/4 teaspoon salt
1/4 teaspoon prepared horseradish
4 slices (3/4 ounce size) reduced-calorie oatmeal bread, toasted
1 1/2 cup shredded romaine lettuce
4 lemon twists, (optional)

directions

Combine shrimp, celery, mayonnaise, and green onions in a small bowl, stirring well.

Add capers and next 3 ingredients, stirring well to combine.

Place bread slices on a serving platter. Divide lettuce evenly among bread slices. Spoon shrimp mixture evenly over lettuce. Garnish with lemon twists, if desired.
