Crab Salad Sandwich

ingredients
1 pound imitation crab, chop then pull it apart with a fork to make it "stringy"
8 ounces cream cheese (I use the "soft" kind)
4 ounces mayonnaise
2 green onions, diced
1 stalk celery, diced
1 teaspoon lemon juice
directions
In a bowl, blend the cream cheese, mayonnaise and lemon juice to a creamy consistency.
Stir in the shredded "Krab", add the celery and onions. Mix well, cover and refrigerate. Put it on your favorite kind of bread with a little lettuce and tomato and enjoy!
For a little extra "zing" a shake or two of your favorite hot sauce is good and sometimes I stir in about a half cup of salsa and a dash or two of Worcestershire sauce and serve it as a dip with tortilla chips.

I was looking for a mock lobster roll recipe, and found this...so glad I did! I added a tsp old bay seasoning,2 tbsp. dill,1 tsp paprika, 1 can chopped water chestnuts,4 more green onions including the tops, one more celery stalk chopped, and served on grilled hoagie pretzel rolls, yummy!!!

I thought this recipe was great! It was a little bitter so I added cottage cheese to the mix as well. It came out fantastic! And it looks great too, once you pull apart the strings. I have more left over for lunch, yum!
