- #80569
under 30 minutes
ingredients
6 ounces cheddar -- sliced
2 thick slices white bread
2 tablespoons Branston pickle -- or more, see note
sweet gherkins
lettuce leaves -- such as bibb
cucumber slices
pickled onions
directions
Divide ingredients between plates to assemble open-face sandwiches.
Note: Branston pickle may not be pretty, but the chunky brown condiment has definite appeal. First produced in the small town of Branston, England, about 60 years ago, the tangy-sweet relish grew in popularity and is now routinely served alongside cheese platters. "No self-respecting ploughman would eat his lunch without a dollop of Branston pickle," says Peter Myers, owner of Manhattan's Myers of Keswick English-food shop. The distinctive relish includes carrots, cauliflower, rutabaga, marrow (a type of summer squash), and dates combined with vinegar, lemon juice, and assorted spices. The vegetables are cooked to crisp-tender, which makes the relish pleasingly crunchy.

This iconic whiskey is a "Jack of all trades" when it comes to cooking. Toss it in some pasta, as a savory dipping sauce, and even bake it into something sweet.

Many years ago on a trip to England, I was introduced to the Ploughman's Lunch. Part of that lunch was Melton Mowbray pie-which I still make.
