Cheese Crackers

ingredients
1/4 pound butter
1/4 pound cheddar cheese, grated
1 cup flour
1 teaspoon salt
1 dash red pepper
directions
Cream together the butter and cheese. Stir in the salt and red pepper.
Slowly add the flour, 1/4 cup at a time, until well blended.
Knead dough until smooth. Roll into a long log and chill in the refrigerator.
Slice thin and place crackers on a cookie sheet.
Bake at 350 degrees F for 8-10 minutes or until just beginning to turn golden.

These turned out nice and crispy and were just the right level of cheesiness! You could make them into a appetizer by sprinkling them with more cheese just enough time in the oven to melt a little.

I made these in the food processor after realizing I had no crackers for our holiday appetizers. I used about half cheddar and half asiago ( probably a bit more than the recipe called for) for the cheese and switched about 1/4 of the flour for whole wheat- was nervous to add any more. I mad my log square and stuck it the freezer for about 1/2 hr. They were totally excellent, buttery and crisp and delicious. I looked at quite a few recipes and was so glad I chose this simple and winderful one. Thanks!
