It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Spicy Daikon Salad

30-60 minutes
ingredients
1 daikon radish
3 cloves garlic, minced
1 tablespoon ginger, minced fresh
2 teaspoons sugar, or more to taste
1 teaspoon salt, or more to taste
2 teaspoons paprika, hot
OR
1/2 teaspoon cayenne pepper
2 tablespoons rice vinegar, or more to taste
2 teaspoons soy sauce
1 teaspoon Asian sesame oil (dark)
3 scallion, both white and green parts, trimmed and finely chopped
1 1/2 teaspoon sesame seeds, toasted
directions
Peel the radish with a vegetable peeler and cut off the ends, then cut in quarters lengthwise and crosswise into 1/2-inch slices.
Combine the garlic, ginger, sugar, salt, and paprika in a serving bowl and mash together with the back of a wooden spoon. Stir in vinegar, soy sauce, sesame oil, scallions, sesame seeds, and daikon.
Let stand for 30 minutes, or as long as 8 hours (if 8 hours, cover and refrigerate).
Just before serving, correct the seasoning, adding salt, vinegar, or sugar as necessary. The salad should be highly seasoned.
