ingredients

1 clove garlic
3/4 teaspoon salt, or more to taste
1 tablespoon sugar, or more to taste
3 tablespoons rice vinegar, or more to taste
2 teaspoons dark sesame oil
1/2 teaspoon red pepper flakes, to taste
4 cups mung bean sprouts

directions

Mash the garlic with the salt in a small bowl. Add sugar, vinegar, the sesame oil, and hot pepper flakes and whisk until the sugar and salt are dissolved. Stir in the bean sprouts and let stand for 5 minutes.

Just before serving, taste for seasoning, adding salt, sugar, or vinegar as necessary; the salad should be highly seasoned.
