Apricot, Goat Cheese and Pistachio Salad

ingredients

7 dried apricots, sliced
2 ounces goat cheese, crumbled
1/4 cup shelled pistachios, pecans or walnuts
2 cups romaine, Bibb, or red leaf lettuce, chopped
1 tablespoon balsamic vinegar
1 tablespoon olive oil

directions

Mix ingredients and season with salt and pepper to taste. Toss and serve.

This recipe is optimal for Phase 2 and Phase 3 of South Beach Diet.
