Tasty breakfast bites made with healthier ingredients like low fat pancake mix, fat free skim milk, and turkey bacon
2/3 cup low fat baking mix or pancake mix
1/3 cup fat-free skim milk PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons fat-free skim milk
2 eggs
4 slices turkey bacon, chopped and cooked until crispy*
2 slices American cheese
1 tablespoon plain yogurt or applesauce
Preheat oven to 400 degrees F.
Scramble eggs and 2 tablespoons skim milk in bowl
In a separate bowl, combine pancake mix, 1/3 cup skim milk and either 1 tablespoon yogurt or applesauce (or vegetable oil, if you prefer) Add 2 tablespoons scrambled egg mixture to pancake mix and blend well with fork until smooth
Cook remaining scrambled eggs, then mix cooked eggs and turkey bacon together.
Spray muffin pans with non-stick spray, or use baking cups.
Add 1/2 tablespoon pancake mixture to muffin cups, spoon egg and turkey bacon mixture into muffin cups. Tear and divide cheese slices, add to muffin cups. Top with remainder pancake mix.
Bake at 400 degrees F for 10-12 minutes or until lightly golden.
*Turkey bacon can be substituted with turkey sausage or deli-sliced ham
My kids LOVE these, and they are great cooked the night before and heated for 15-30 seconds in the microwave for a quick breakfast on the go! For an even more special treat, try dipping in some sugar-free pancake syrup!
ADDITION: Instead of just dipping in syrup, try adding 3Tbs syrup to the pancake batter, so that sweet goodness is baked right in!

This recipe popped up just when I was wondering what to do with the last 1/2 cup of Krusteaz buttermilk pancake mix and some frozen fruit. It inspired me to make a fruit pie with the two using the pancake as the top "crust." 30 minutes later - Voila! Just delicious! Another way to use pancake mix! I love your creative recipes!
