Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Pumpkin pie for breakfast? Not quite, but you'll forget that you're eating a healthy breakfast because it tastes like dessert!
1/4 cup milk
6 tablespoons water
1/4 cup old-fashioned oats
1 pinch ground cinnamon
1 pinch ground nutmeg
1/2 teaspoon vanilla extract
1/8 cup canned pumpkin
honey, to taste
additional ground cinnamon
Bring the milk and water to a boil in a saucepan over medium heat.
Stir in the oats, cinnamon, and nutmeg and reduce the heat to medium-low. Let simmer until the liquid is absorbed, stirring occasionally, for 7-10 minutes.
Stir in the vanilla extract, pumpkin, and honey. Serve immediately and top individual portions with an additional sprinkling of cinnamon.

This was a really nice and easy recipe! My wife and I enjoyed it a lot - it would have been better with more sugar though :) - but that would just make it unhealthy. I used skim milk, bran oats, unsweetened pumpkin, and no honey. I calculated the nutritional value to be... Calories: 210, Fat: 4g, Carbs: 40g, Fiber: 13g, Protein: 9g, and Sodium: 37mg.

This was a nice way to dress up the usual bland oatmeal breakfast aside from the odd sprinkle of brown sugar or mix of raisins in it. With the pumpkin in it, this was *very* filling! I would say serve a little less than usual or you'll waddle to work before falling asleep at your desk.
