Mini Pineapple Upside-Down Cakes

ingredients

1 can (20 ounce size) crushed pineapple
1/3 cup butter, melted
2/3 cup packed brown sugar
24 maraschino cherries
1 package (18.25 ounce size) yellow or pineapple flavored cake mix, prepare batter as directed on box

directions

Preheat oven to 350 degrees F. Grease muffin cups. Drain crushed pineapple.

Combine butter and brown sugar. Evenly spoon mixture into muffin cups. Place one cherry in the center of each cup. Top with 1 tablespoon pineapple.

Divide batter among muffin cups. Bake for 20 to 25 minutes. Invert onto serving platter.

    While very delicious, they stuck in the pans, spray heavily with Pam. Mine were done in only 18 minutes, so watch closely once they start to smell good!
