Banana Cake

ingredients

1 cup ripe bananas
3/4 cup oil
1/2 cup sugar
1 box (18.25 ounce size) yellow cake mix
5 eggs
1 teaspoon vanilla extract
3 tablespoons brown sugar
1/2 cup chopped pecans
1 teaspoon cinnamon

directions

Put bananas and oil in blender and liquefy. Add this mixture and sugar to cake mix. Beat thoroughly in electric mixer. Add eggs one at a time, beating well after each addition. Add vanilla. Combine brown sugar, pecans and cinnamon. Pour half of batter into greased and floured bundt pan. Sprinkle sugar, nuts and cinnamon mixture over batter. Pour remaining batter into pan. Bake at 350 degrees F for about 1 hour.

    great recipe! I too used 4 bananas and doubled the vanilla,used cinnamon/sugar instead of flour. Put combo of nuts,sugar and cinnamon on top,then topped with glaze! Wonderful taste and texture,Thanks for sharing!!

    Very good cake. I used four bananas as suggested by other reviewer. The only thing I did different was that I dusted the bundt pan with cinnamon sugar, and I doubled the vanilla just because I don't think there is such a thing as "too much vanilla". It was a hit and every bit was eaten.

    We ended up with an abundance of overripe bananas and did a search for recipes using a cake mix. I found this recipe. Daughter and I spent time in the kitchen together putting this recipe together and she took the picture of the cake that we submitted. It looked great and tasted great!
