A crispy coating but tender inside, this French toast is the ultimate breakfast.

2 eggs
1/2 cup milk
1/4 teaspoon sugar
1/4 teaspoon ground cinnamon
1 tablespoon oil
6 slices bread
Toppings
maple syrup
powdered sugar
honey
jam or jelly
Preheat a griddle or skillet over medium heat.
Beat the eggs in a shallow bowl until uniform in color. Stir in the milk, sugar, and cinnamon.
Add the oil to the griddle.
Dip each slice of bread into the egg mixture, coating both sides and letting it just soak up enough of the egg mixture to coat well but not so that it's soggy.
Place the bread on the oiled griddle in an even layer. Cook for 2-3 minutes per side or until golden brown. Press down lightly while cooking to form a crisp crust.
Serve hot with maple syrup, powdered sugar, honey, or jam as desired.
