1 tablespoon Worcestershire sauce
1/2 lemon, juiced
3 egg yolks
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
1 pinch red pepper flakes
1 pinch Old Bay seasoning
1 pinch salt
3 ounces mayonnaise
1 1/2 cup fresh bread crumbs
1/4 cup fresh parsley, finely chopped
1 pound lump crab meat
olive oil for sauteing

directions

Combine the Worcestershire sauce, lemon juice, egg yolks, mustard, peppers, Old Bay seasoning, salt and mayonnaise in a mixing bowl and mix well. Add the bread crumbs and parsley and mix well.

Gently sift through crab meat to remove any shells. Add to the mixture and fold in gently. Do not break up the crab meat.

Make into patties and saute in olive oil for 2 to 3 minutes on each side.

    This turned out perfectly for me. I agree with the other review that you have to use FRESH bread crumbs, not the packaged stuff, otherwise you'll have too much bread. HUGE difference! I made a spicy remoulade to serve with these. Big hit with the husband!

    This is an awesome recipe! I could tell, just by looking at the ingredient list, that it would be great. I followed the recipe to the letter, and only using the juice of one full lemon, as the lemons I had on hand were smaller than a typical large one. The fresh chopped bread (crumbs) make a significant difference over the boxed dry type crumbs. Also, I used a 1 lb. can of Van Camps Lump Crab meat (98% crab and very little water in the pack) found in the refrigerated deli section of most food stores (here in CA anyway). This recipe will produce six good sized patties; wherein, two per person is very filling. They cook quick, about 3 to 4 minutes on each side in the pre-heated oil. Served with sliced lemon wedges and tartar sauce--fantastic and very close to the taste of the true Rainforest Café version, which I love so much!!
