Cajun Crab Cakes Recipe

Serves/Makes: 4
Ingredients:
1 medium celery stalk -- cut into pieces
1 small red pepper -- seeded and chopped
1/2 medium onion -- quartered
1 clove garlic -- quartered
1/2 cup bread crumbs
2 large egg whites -- lightly beaten
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 pound crab meat -- cooked
Directions:
Preheat oven to 350F. Coat a baking sheet lightly with cooking spray and set aside. Combine celery, bell pepper, onion and garlic in a food processor and process until finely chopped but not pureed.
Transfer mixture to a mixing bowl. Add bread crumbs, inch high, and place patties on prepared baking sheet.
Bake in upper third of over for 20 minutes, turn cakes and bake an additional 15 minutes or until golden and slightly crispy outside.
Serve 2 cakes per person.
