Crispy Cornflake Baked Potato Wedges

ingredients
6 medium potatoes, peeled, cut into quarters lengthwise
3 tablespoons butter, melted
1/2 cup cornflake crumbs
1 teaspoon salt
1 teaspoon paprika
directions
Preheat oven to 425 degrees F. Cut each peeled potato into quarters. Place melted butter in a shallow bowl.
In another shallow bowl, combine the cornflake crumbs, salt and paprika.
Roll potato wedges in the melted butter, then dip and coat in the cornflake crumb mixture. Place wedges on a 10" x 15" jelly roll pan, cover with foil and bake for 30 minutes.
Uncover and bake 15 minutes longer or until potatoes are tender.
