Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Flour tortillas are filled with ground pork, green chiles, a Mexican cheese blend, and green onions and then broiled until done.
non-stick cooking spray
1/2 cup chopped onion
2 teaspoons minced garlic
1 pound ground pork loin
1 can (4.5 ounce size) chopped green chiles, undrained
8 flour tortillas (6 1/2 inch size)
1 1/2 cup pre-shredded light Mexican cheese blend
1/4 cup chopped green onions
1/2 cup fat-free sour cream
1/2 cup bottled salsa
Preheat broiler.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion, garlic, pork, and chiles; cook six minutes or until browned, stirring to crumble.
Place half the tortillas in a single layer on a baking sheet. Spread about 1/3 cup pork mixture over each tortilla; top each with about 1/3-cup cheese, 1 tablespoon green onions, and 1 tortilla.
Broil quesadillas for 1-1/2 minutes on each side or until crisp. Cut each tortilla into four wedges. Serve with sour cream and salsa.

These turned out to be a good Tex-Mex comfort meal. They maybe could have used something more than garlic and onions to provide a little zing. But everybody enjoyed them all the same!

These quesadillas have a good but very mild flavor. If you want to spice them up, try using chorizo or other spicy pork sausage in place of the ground pork. I added a little ground cumin and salt to pick up the flavors a bit. Flipping the quesadillas is kinda tricky and some of the filling fell out. Personally, I find it easier to top on half of a tortilla with filling and then fold it over.
