Baked Ham and Jarlsberg Cheese Quesadillas

ingredients
non-stick cooking spray
4 large tortillas
1/2 cup shredded Jarlsberg cheese, divided
8 ounces sliced baked ham
1/2 cup chopped tomatoes
freshly ground black pepper
1 teaspoon vegetable oil
mustard, optional
directions
Heat oven to 425 degrees F. Lightly coat a cookie sheet with cooking spray.
Arrange 2 tortillas on prepared cookie sheet. Sprinkle tortillas with 1/4 cup shredded Jarlsberg cheese, then top evenly with ham. Sprinkle tortillas with tomatoes and remaining 1/4 cup shredded Jarlsberg cheese. Sprinkle each with a pinch of freshly ground pepper. Cover filling with remaining 2 tortillas and brush tops with oil.
Bake 10 to 12 minutes until lightly browned and crisp. Transfer quesadillas to cutting board and cut each into wedges. Serve with mustard, if desired.
