It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

under 30 minutes
ingredients
1 package (14 ounce size) pre-baked pizza crust
1/4 cup mayonnaise
1/2 cup shredded cheese, like a 5-cheese Italian blend
1 medium tomato, sliced
8 slices deli pastrami
4 leaves lettuce
cooking spray
directions
Preheat a 2-sided contact grill or panini sandwich press as directed by machine manufacturer.
Cut the pizza crust in half. Spread the mayo on one side of each half.
On one of the crust halves, layer the cheese, tomato slices, pastrami, and lettuce. Place the other crust half mayonnaise-side down on top.
Grease the grill or sandwich press lightly. Place the sandwich on the grill and press the lid down. Cook for 6 minutes, pressing the lid down as needed to flatten the sandwich.
Remove from the grill when the sandwich is browned and the ingredients are heated. Slice the sandwich into wedges.
You can also make this on a griddle or grill pan. Set a heavy, wide-bottomed pan on top of the sandwich while cooking and turn the sandwich once during the cooking time.
