ingredients

1/2 cup cold leftover fish (bones removed)
1/2 cup cold mashed potatoes
salt, pepper & onion powder to taste
1 egg, beaten
1/2 small onion, grated
flour
shortening or oil

directions

Shred fish and mix with mashed potatoes and seasonings. Add beaten egg and onion.

Spray hands with non-stick cooking spray and shape mixture into small cakes. Dredge in flour and fry in 1/2 to 1 inch of hot oil.
