1 egg
3/4 cup cooked, mashed sweet potato
5 tablespoons brown sugar
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup orange juice
directions
Beat egg slightly; stir in remaining ingredients and mix well. Pour into custard cups or small casserole.
Bake at 350 degrees F for 45 minutes or until knife inserted in center comes out clean.
Serve warm or cold, topped with plain or whipped cream.
