It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

- #48168

1-2 hrs
ingredients
5 fresh jalapeno peppers
2 tablespoons olive oil
1 pound ground beef round
1 pound boneless beef chuck (cut in 1/2 inch cubes)
2 medium onions, chopped
3 cloves garlic, minced
1/2 cup chili powder
1 teaspoon cumin seeds, crushed
1 quart beef broth
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
directions
In a saucepan, saute the jalapeno about 10 minutes until tender when pierced with knife. Cut and remove seeds. Heat oil, in a large saucepan, add meat, cook over medium high stirring often.
Add onions, garlic, jalapenos. Cook about 5 minutes until onions have softened. Add chili powder and cumin seeds and stir 1 minute. Stir in remaining ingredients; bring to a boil.
Reduce heat to low and cook about 45 minutes. Serve with sharp cheddar cheese and sour cream.
NOTE: This works good with beans, green onions or rice added if you have non-low carb folks eating with you.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
