From The All American Cowboy Cookbook, this recipe purports to be legendary Gene Autry's take on Texas chili. True Texas chili, of course, doesn't contain beans but we'll let it slide this time.

1 1/2 pound ground beef
1 clove garlic, minced
1 onion, chopped
1 green bell pepper, chopped
1 package chili seasoning, or to taste
1 can (16 ounce size) kidney beans
1 can (8 ounce size) tomatoes, chopped
1 cup monterey jack cheese shredded
chopped onions (optional)
Brown ground round, onion, and bell pepper in a large saucepan until soft. Add chili seasoning, undrained kidney beans and tomatoes. Simmer covered for about 1 hour.
Just before serving, add cheese and stir to melt. Top with chopped onions and serve.

It was very good, but what does Gene Aurty have to do with Texas? He's an Okie!!!

This recipe was simple to make, fantastic taste, and very little adjustment needed. I have lived in Texas for most of my days away from California life, where I was born, and this is Border Chili at it's finest.
