ingredients
6 boneless skinless chicken breasts, cubed
4 cans tomatoes with green chilis
2 cans green chiles
4 tablespoons Worcestershire sauce
4 medium onion
4 bell peppers
1 bunch green onions
4 cloves garlic
1 pint chicken stock
3 tablespoons cooking oil
1 medium red bell pepper
1 tablespoon cumin
directions
Heat oil in dutch oven or skillet and brown chicken and set aside. Saute onions and bell peppers until soft. Add tomatoes and chilis, chicken stock, tomato paste, mushrooms and all seasonings. Cook on high heat and simmer until thickened - about one hour.
Add chicken, red bell pepper, Worcestershire sauce, cumin and adjust seasoning. Let it set at room temperature for two hours to cool. Place in refrigerator overnight.
To serve, reheat on stovetop until hot.
