Ingredients:
1/2 cup baking mix
1/2 cup sugar
4 eggs
2 cups milk
1 cup coconut
1 teaspoon vanilla
3 tablespoons butter

Directions:

Mix all ingredients in a blender. Pour into 9-inch, greased pie plate.

Bake at 400 F. for about 25 minutes or until custard is set.
