1 bunch kale, washed and dried completely
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice (or balsamic vinegar)
1/2 teaspoon sea salt
Preheat oven to 350 degrees F.
Cut the kale into chip-sized pieces and place in a large bowl. Stir in the olive oil, lime juice, and sea salt. Make sure the kale is completely coated in the mixture.
Line a baking sheet with parchment paper. Place the kale chips on the parchment paper in an even layer.
Place the baking sheet on the center rack of the oven and bake for 8 minutes at 350 degrees F or until the kale is to the desired degree of crispness.
Remove the baking sheet from the oven and let the chips cool slightly before removing to a wire rack. Let cool completely before serving.
Store leftovers in an airtight container at room temperature for 1-2 days.

Kale is rich in beta carotene, vitamin K, vitamin C, and lutein making this snack a healthy choice! The chips are very delicate so they are meant for snacking, not dipping. You can add other seasonings if you wish to vary the flavor. Kale is one of the less bitter greens making this a mild but tasty chip.
