Marzipan is a sweet confection made of almonds, sugar, and egg. It's often used as an icing or filling for cakes, pastries and candies. It can also be flavored or tinted.

2 cups ground almonds
1 1/4 cup superfine sugar
1 1/4 cup powdered sugar, sifted after measuring
1 egg
2 tablespoons lemon juice
1/4 teaspoon almond extract
In a bowl, mix together the ground almonds, sugar, and powdered sugar until well mixed.
In another bowl, whisk together the egg, lemon juice, and almond extract. Stir the egg mixture into the sugar mixture and mix until it forms a pliable dough.
Dust a work surface with powdered sugar. Roll the marzipan out and cut out desired shapes, or form into shapes as needed.
To color the marzipan, add color paste (not liquid) to the dough and knead until uniform in color.
If you are not using the marzipan immediately, wrap tightly in plastic wrap and refrigerate for up to 2 days.
To harden marzipan shapes and cutouts, place them on a baking sheet and bake at 200 degrees F until dry.
