Almond And Honey Cookies

ingredients
1/2 cup butter
1/4 cup brown sugar
1/2 cup honey
1 egg
1 teaspoon vanilla extract
1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup almonds
directions
Cream the butter, sugar, honey and egg. Add the vanilla.
Pass the flour, baking powder and baking soda through a colander to sift; add the almonds and the flour to the butter and mix well.
Put the mix on a buttered cookie sheet by spoonfuls. Cook in a pre-heated oven at 400 degrees F for 12-15 minutes.

The cookies turned out a bit bland for my taste so I placed some almonds on top of the cookies and drizzled honey over them. They were delicious after that
My family found this cookie to be too dry and cake-like for our taste. I used the minimum cooking time and would consider cooking it even less than that to maintain some moisture. The flavor was kind of weak and I would suggest using more vanilla or even almond extract than the recipe calls for.

Halved the recipe coz I was trying it for the 1st time, but regretted later. They turned out really great, like little cookie cakes. Just melted in the mouth. I used sliced almonds which I toasted in the oven for a few mins. I did add a few drops of Almond extract to bring out the almondy smell mmmm....They don't take too long to bake so u gotta watch out or the bottom burns.. Will definately be making another batch in a few days... Thanks for the recipe!!
