INGREDIENTS:

3 tablespoons margarine
1 cup celery, chopped
1 cup onion, chopped
3/4 cup green bell pepper, chopped
1 teaspoon flour
1 1/2 cup chicken broth
1 cup milk
1 can cream of mushroom soup
black pepper
2 cups chicken breast, cooked and cubed
12 ounces spaghetti pasta, cooked and drained
1 cup Mexican blend cheese, shredded
buttered cracker crumbs


DIRECTIONS:

Cook celery, onion and green pepper in margarine in a saucepan. Stir in flour, chicken broth and milk, cook until thickened and bubbly. Add mushroom soup.

In a 9x13 baking dish layer each of the sauce and spaghetti. Repeat layers again. Top with cheese and cracker crumbs.

Bake at 325 degrees F for 45 minutes or until bubbly.

I had boiled chicken the night before so prep time was about an hour. Everyone loved it!
