Seafoam Salad

ingredients
1 package (3 ounce size) lime gelatin powder
1 cup boiling water
1/2 pint whipping cream
6 ounces cream cheese, softened
1 small can crushed pineapple, drained
1 cup chopped pecans
directions
Add the boiling water to gelatin and stir well until dissolved; place in refrigerator.
When gelatin starts to set, take the whipping cream and whip until stiff. Next whip the whipped cream into the gelatin, followed by the softened cream cheese.
After all has been whipped, with a spoon mix in the pineapple and pecans. Finally, pour mixture into bowl and place in the refrigerator.

the recipe tasted ok, but it certainly wasn't one of the best tasting seafoam salads I've had. It tends to work better combined rather than in separate layers, the pears may have been able to be slightly chunky rather than just smooth, and there seemed to be a little too much cool whip in relation to the jello mixture. strangely enough there was a strange lemony flavor I noticed on my second helping. I made it, and I'm still not sure where that came from. lol Decent recipe though.
Thanks _ I lost my mother's recipe for Lime Jello Salad and hoped someone had something like it. Funny it is the same one minus the celery we had taken out years ago because none of us liked it anyway!!!!!!!
